Job Description
We are seeking a highly skilled and creative Pastry Chef / Chocolatier to join our culinary team at Hyatt Regency Ontario. This pivotal role requires an artist with a passion for crafting exquisite desserts, pastries, and chocolates that delight our guests. You will be responsible for the full spectrum of pastry production, from concept development to execution, ensuring the highest standards of quality and presentation. Key Responsibilities
- Design, prepare, and present a wide array of high-quality desserts, pastries, and artisanal chocolates for various outlets, banquets, and special events.
- Develop new recipes and innovative menu items, incorporating seasonal ingredients and culinary trends.
- Oversee and manage the daily operations of the pastry kitchen, including inventory, ordering, and cost control.
- Ensure strict adherence to food safety and sanitation standards (HACCP, local health codes).
- Train, mentor, and supervise junior pastry staff, fostering a collaborative and productive work environment.
- Maintain equipment and work areas in excellent condition, reporting any maintenance issues promptly.
- Collaborate with the Executive Chef and other culinary team members to integrate pastry offerings with overall menu concepts.
Required Skills
- Proven experience as a Pastry Chef or Chocolatier in a reputable establishment.
- Exceptional creativity and artistic flair in dessert and chocolate presentation.
- Strong knowledge of various pastry techniques, baking methods, and chocolate tempering.
- Proficiency in inventory management, cost control, and kitchen operations.
- Ability to work efficiently under pressure and meet tight deadlines.
- Excellent communication and leadership skills.
- Understanding of food safety and hygiene regulations.
Preferred Qualifications
- Culinary degree or relevant certification from an accredited institution.
- Experience in a luxury hotel or high-volume fine dining environment.
- Familiarity with international pastry trends and techniques.
- Proficiency in multiple languages (beneficial for a diverse team).
